So, I’m a subscriber of NatureBox (a monthly healthy-snacks club) and fell in love with their Sriracha Roasted Cashews… omg yummers!!
The thing was, I selected only 1 bag of these things (I chose the 5-bag option) and finished it while watching last Sunday’s episode of The Walking Dead. (Srsly… I sat to watch the show with JRoc, and the bag was suddenly empty… it was weird!)
Anyway, we were totally craving for more and didn’t want to have to wait for next month’s delivery, so I decided to make my own batch… and OHHHEMMMGEEE… making your own is so much better because you get to adjust exactly how spicy/sweet you want them!
They’re super simple to make and lookie how they turned out!!!
Sweet & Spicy Sriracha Cashews!
Ingredients
- ¼ cup packed light brown sugar
- 1 Tablespoon Sriracha sauce
- 1 inch piece of fresh ginger finely grated
- 1.5 cups cashews
- 1 Tablespoon white sesame seeds
Instructions
- Preheat the oven to 350 degrees F.
- In small pan over medium high heat, combine brown sugar, Sriracha sauce, and ginger, stirring frequently until the sugar melts (about 5 minutes).Remove from heat.
- Pour cashews into mixing bowl. Drizzle the sugar mixture over the cashews and stir well to evenly coat them. Add sesame seeds and stir again to combine.
- Spread cashews out on baking sheet and bake until crisp (about 15-20 minutes), stirring every 5 minutes. Note: to prevent cashews from sticking, spray the baking sheet with non-stick spray, or line baking sheet with parchment paper.
- Let the nuts cool on the baking sheet.

Got any tips to get them off the pan? Mine were practically glued to the pan.
Hi Sarah ~ Yeah, I was practically scraping these guys off the baking sheet too, so I recently tried spraying the baking sheet with non-stick spray… worked great! I also made a batch using only parchment paper on the baking sheet and that worked well also! Hope this helps!
Maybe put that earlier in the instructions, instead of at the end. Mine were already on the pan when I saw that… chiseling them off now. :/
Made these today, did use the non stick spray, the nuts slid right off the baking sheet. These are FANTASTIC, will make again! Thanks for sharing your recipe.

Do you have any tips for stirring in the mixture with the cashews? It all kept clumping together for me.
Hi Renn ~ It does the same for me 🙂 Just take that clump of cashew/sriracha and spread/flatten it all out on the baking sheet. They’ll still turn out yummy!
I added a little coconut oil to the mixture as I was heating it up. It helped to keep it from clumping and didn’t affect the taste.

I must have done something wrong :/ I finally tried this recipe, and they turned out sticky and burnt
I’m super excited to make these but have a few questions:
1. I already bought a bunch of cashews that are raw salted. Will they work?
2. I don’t see sesame seeds on the ingredients list on nature box’s website. Do they change the flavor? Can I skip them?

Hi Stephanie ~ 1. I’ve tried this with salted cashews as well with good results. I tend to add a little more sriracha, so I think it muted out the saltiness… give it a shot! 2. The sesame seeds are pretty much optional… I used them to make the nuts look pretty 🙂 Doesn’t change the flavor at all, so go ahead and skip them! Let me know how they turn out!!
I’m addicted to those Nature Nuts and so glad i found your recipe, as with the dollar exchange they are quite costly to get to Canada.
As compared to the original recipe how would you compare yours as far as sweetness and spiciness, the orriginal are a wee bit to sweet for my taste.
